Reasons to choose fresh potato
Potato is a nutrient rich food, especially when it is fresh because it has no preservatives. In contrast, frozen potato can be chemically processed during the production process, altering its original composition so that it can be stored for a long time. In addition, it is clearly tastier than frozen and makes it a healthier choice.
In order to benefit from the valuable ingredients of fresh potatoes, we must adhere to certain conditions regarding the preservation of its trace elements and vitamins, such as:
- It should be stored in a shady and cool place.
- It is best not to store it for a long time because it loses 50% of the vitamin C it contains.
- We choose to boil the whole potato, with its skin. This is because, when the potato is boiled with its skin, it retains a greater amount of vitamin C, B vitamins and potassium than otherwise.
- We need to use exactly as much water as we need when cooking, in order to have the least possible losses.
